Holiday Squash Casserole

Need a quick super yummy side dish recipe for the holidays. Try this one. I was in H.E.B. the other day and sampled this recipe. OMGosh, I loved it. So much so, I made it with dinner tonight. Had to share. I love the holidays!

Ingredients:4 cups sliced YELLOW SQUASH, 1/2 cup chopped ONION, 35 BUTTERY ROUND CRACKERS, crushed, 1 cup CHEDDAR CHEESE, 2 EGGS, beaten, 3/4 cup MILK, 1/4 cup BUTTER, melted, 1 teaspoon SALT GROUND ,BLACK PEPPER, to taste
2 Tablespoons BUTTER

Directions:1. Preheat oven to 400°F. 2. Place squash and onion in a large skillet over medium heat. Pour in a small amount of water. Cover, and cook until squash is tender, about 5 minutes. Drain well, and place in a large bowl. 3. In a medium bowl, mix together crushed crackers and cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl, mix together eggs and milk, then add to squash mixture. Stir in 1/4 cup melted butter, and season with salt and pepper. Spread into a 9 x 13 inch baking dish. Sprinkle with remaining cracker mixture, and dot with 2 tablespoons butter. 4. Bake in preheated oven for 25 minutes, or until lightly browned.

Prep Time: 10 Minutes Cook Time: 25 Minutes

Its been a while since my last post. Fail. I love to blog. I don't why I don't just sit and do it. Even if its just for me. Its nice to look back. Like a diary or photo album. ANYWAY. Before Christmas, I saw this super cute idea on Pinterest. Wrapping your kids door with crepe paper. They can bust through it. You can do this for Christmas or their birthdays, too. We did it for Christmas!! It was super fun!! I waited until they were sound asleep and went up and wrapped their door ways with crepe paper in Christmas colors. Christmas morning they busted through it to come and see what Santa brought them. They thought it was so much fun!! I will do it again this year. It might also be fun to do for the last day of school or the first day of summer and or the first day of school. Ideas are endless. Thanks, Pinterest!!
